The variety originates from the moraine ridge area of Ivrea in Italy. The fruit have a round transverse profile and a characteristic flattened shape. The skin is green with orange tints on the sunny side; the peduncle is long and thin. The flesh is firm, aromatic, and pure white.
It belongs to late-maturing varieties; ripening begins from mid-October. The fruit have good keeping quality and can be stored until March-April. The plant is noted for high hardiness, resistance to parasitic diseases, and a low tendency for biennial bearing.
The variety is traditionally used fresh, for baked apples, and for various types of processing, including the preparation of mustard.
