Fruits of the Joly Rouge variety are classified as bittersweet and contain a large amount of tannins, which cause the juice to darken upon oxidation. The variety is traditionally used in cider production, providing the drink with softness and roundness of taste, and is often used in blends with other local varieties.

Trees of the variety are adapted to humid climates, grow well on clay-siliceous soils, and possess natural disease resistance. In Normandy, trees of this variety are traditionally grown as standard trees.
