The Da Cuccare variety is a local old variety traditionally grown in the vicinity of Lucca in Tuscany. The plant belongs to the dual-purpose category, with fruits used both for olive oil production and as a table product.
Biologically, the variety is self-sterile and requires pollinator varieties for fruiting. Agronomic characteristics indicate the tree's sensitivity to cold. The oil obtained from these fruits has a bitter taste with light fruity and spicy notes, the intensity of which depends on the maturity of the olives.
In the literature, there is ambiguity in the use of the variety name, as the term Cucco can be used to refer to other local olive varieties with a different fruit shape. Studies of the variety are conducted primarily within the framework of conserving genetic biodiversity.
