The KOLOVI variety is indigenous to the island of Lesbos, where it occupies about 70% of olive plantation areas. The tree is not large in size, has relatively broad leaves, and is well-adapted to growing on mountain slopes at altitudes of up to 600 meters on shale soils.
The variety is late-maturing: full fruit ripening occurs in February–March, although harvesting for oil production often begins in November. The plant possesses good drought tolerance and medium requirements for maintenance.
The medium-sized fruits have a flesh-to-pit ratio of 6.5:1 to 7.5:1. Oil yield is 21–25%. The oil obtained from this variety is characterized by an intense aroma, smooth texture, mild taste, and a high concentration of polyphenols.
