Konservolia is an ancient Greek cultivar, known by a multitude of local synonyms, such as Amphissis, Piliou, and Voliotiki. The tree is distinguished by vigorous growth and reaches a height of 6–8 meters, forming a spreading canopy of medium density with broad elliptic-lanceolate leaves.
The fruits are large, weighing 6.5–7 g, and have an elliptical asymmetrical shape. The firm flesh separates easily from the pit, which makes the variety preferred for pickling. The taste is characterized as mild and fruity. Harvesting is possible in both the green and black maturity phases.
The variety possesses good winter hardiness and is self-fertile, although cross-pollination contributes to an increase in yield. The plant is moderately sensitive to drought and susceptible to olive fruit fly infestation, and is also sensitive to severe frosts.
