The Krvavica variety, also known as the "Little Beauty of Skradin", is an indigenous plant of the Northern Dalmatia region. The tree shows good adaptability to cool and continental growing conditions. Harvesting of the fruits, which develop red spots on their surface upon ripening, is traditionally carried out in October.
The primary purpose of the variety is the production of extra virgin olive oil, which is distinguished by an intense fruity flavor with notes of herbs, artichoke, and green apple, as well as a pronounced bitterness and a piquant aftertaste. The oil is characterized by a high polyphenol content. Yields are regular but low, with an oil output of approximately 12 kg per 100 kg of olives.
The variety is often grown in mixed plantings with the Oblica variety to obtain a balanced oil composition. As Krvavica is a product of natural folk selection, precise data on its origin is unavailable.
