The name Pendente characterizes the morphological features of the tree, manifested in a drooping crown shape with long hanging branches. In Italian agronomic tradition, this term is most frequently applied to the autochthonous variety Carpellese, originating from the provinces of Salerno and Avellino.
The Carpellese variety is used primarily for oil production, which is included in DOP category products. The plant has good resistance to low temperatures and is characterized by high productivity. The fruits have a small size and a high pulp content relative to the pit.
The oil obtained from Carpellese fruits possesses a balanced taste with slight bitterness and pungency, as well as an aroma of medium intensity with notes of green apple, herbs, almond, and hazelnut.
