The Ravece variety (Campania region) is characterized by medium vigor, a compact crown, and late ripening. The fruits are oval, weighing about 3 g, and are suitable for producing oil with an intense aroma of green tomato and artichoke. The variety is resistant to drought and peacock spot, but is susceptible to the olive fruit fly.

The Carolea variety (Calabria region) is a dual-purpose cultivar for oil production and table use. The tree is of medium vigor and produces large fruits (4–8 g) with a high oil content (20–25%). The variety is noted for high productivity and cold hardiness, but has low resistance to the olive fruit fly.

The Cucco variety (Abruzzo and Molise regions) also belongs to late-ripening and productive varieties with large fruits weighing about 4 g. The plant has good cold hardiness, but is sensitive to olive knot.
