Fruits of the Orbetana variety, also known as Raggio, are quite large and change color from intense green to glossy black as they ripen. The variety is self-incompatible and requires cross-pollination, for which the varieties Carolea, Kalamon, Maurino, and Nostrale di Rigali can be used.
Oil from this variety has a fruity taste with a harmonious combination of bitterness and pungency, and the aroma contains herbaceous notes, hints of artichoke, fresh almond, and tomato. Orbetana demonstrates good recovery ability after frost damage and is often used in monovarietal production.
