The Vermillau variety (also known as Vermillon) is a local French variety, traditionally cultivated in the Gard and Bouches-du-Rhône departments. It is an old autochthonous variety that resulted from centuries of folk selection.

Agrotechnically, the variety has a very high susceptibility to Spilocaea oleaginea. Precise morphological plant parameters and yield indicators are not detailed in available sources.

The fruits of the variety are used mainly for obtaining olive oil. Vermillau is rarely used as a monovarietal product, being part of blends with other varieties, for example, Broutignan, in the production of oils with a protected designation of origin.
