The name Sfax refers to a group of local pistachio trees that have been cultivated in the Sfax region for a long time. This ecotype is not the result of a classic breeding program but is classified as a local resource of interest for the conservation of genetic diversity.
The fruits are characterized by the presence of rather large and dense clusters, and the kernels are distinguished by a high-quality fatty acid composition and high chlorophyll content. In terms of fruit size, yield, and shell splitting percentage, the variety is often inferior to the Mateur variety common in Tunisia.
The plant is adapted to semi-arid conditions and demonstrates high resistance to moisture deficiency, which allows it to be used for plantings on low-productivity arid lands.
