The variety is a mutation of the Burbank's Seedling variety, obtained in 1873. The pedigree includes the varieties Rough Purple Chili, Garnet Chili, and Early Rose. The plants are characterized by a vigorous and spreading growth habit. The variety is late-maturing, requiring from 140 to 150 days to mature.
The tubers have an oblong shape with shallow eyes, brown netted skin, and white flesh. Under adverse conditions, they are prone to knobbiness. The variety is susceptible to a number of viruses and fungal diseases, including Rhizoctonia.
Due to their floury texture and high starch content, the tubers have excellent taste qualities and good keeping quality. The variety is considered the standard for making french fries, baked potatoes, and mashed potatoes.
