The Nevada variety, developed by the INIFAP institute, is a high-yielding variety for industrial use. Studies note its tolerance to late blight and purple top syndrome, as well as resistance to internal tuber discoloration caused by this syndrome.
When analyzing the suitability of tubers for the production of minimally processed food products, a high susceptibility of the variety to darkening when sliced due to oxidative processes was revealed. This property requires the use of special protective treatment methods, such as the use of citric or ascorbic acid.
