The Cascada variety is of the red-grain type and is intended for professional organic production. The plants possess the ability to provide good ground cover, which helps suppress weeds, and they grow taller and more openly than conventional wheat.

The variety is characterized by good grain formation even in years with unfavorable weather conditions. High resistance to yellow rust infection is claimed.
