Flour from this variety is distinguished by high strength due to a protein content of up to 15% and high-quality gluten, which makes it suitable for baking sourdough bread. Bread made from this wheat has an intense aroma and a golden color.
Historically, the variety was displaced from mass production due to low resistance to fungal diseases. Modern studies also note the susceptibility of the plants to aphid infestations compared to other varieties.
