The Bivona variety, also known as Casedda, is an autochthonous wheat population that formed in Sicily through many years of folk selection. The plant is classified as a representative of local Triticum turgidum groups and belongs to the category of ancient grains.
The object is characterized by high intra-population genetic variability. Unlike modern intensive varieties, Bivona has weaker gluten quality indicators and is not intended for the industrial production of pasta.
Currently, the variety is primarily significant for the conservation of biodiversity, scientific research, and organic farming, as well as for limited use in baking traditional types of bread.
