The Cleto variety belongs to the durum wheat group and has a medium development cycle. It is adapted for cultivation in the central and northern regions of Italy.

Quality indicators of the variety include a protein content of about 14%, a gluten index of 70, an SDS sedimentation index of 23, a yellow index of 11, and an ash content of 1.9. The variety is used primarily in the pasta industry for the production of semolina.
