The name Marzuolo is a traditional dialect term denoting wheat varieties with a short vegetation cycle intended for late sowing at the end of winter or early spring. In the context of Sicily, this name refers to a variety of the ancient Timilia population.

Selected in the 1930s, the reste bianche form has white awns and retains the characteristics of the landrace: high adaptability to hot climates and drought tolerance. The plant is undemanding; the grain is characterized by a dark color, high protein content, and a low gluten index.

The product is traditionally used for the production of pasta and specific types of bread, such as Castelvetrano black bread. It should be noted that under the name Marzuolo, other forms of wheat, including Triticum aestivum, may be implied in other regions of Italy.
