The name Marzuolo is historically a collective term for groups of wheat with a short life cycle, sown in March when autumn sowing is not possible. The reste bianche form was selected from the Timilia population and is characterized by white awns.
The plant possesses high drought tolerance and adaptability to hot climates. The grain has a dark color, and the flour made from it contains a high percentage of protein with a low gluten index and is distinguished by a pronounced aroma, being used in baking and for the production of pasta.
