The name Marzuolo was historically applied to wheats suitable for spring sowing if autumn field work was not possible. In the 1930s in Sicily, forms with black awns, known as reste nere and often associated with the Timilia type, were distinguished within this group.
The plant is characterized by high drought tolerance and the ability to adapt to hot conditions, making it suitable for organic farming. The grain is dark, and the flour made from it has a grayish tint, high protein content, and low gluten index.
Traditionally, the produce is used for the production of fresh pasta and bread that retains its softness for a long time. It is important to note that various local forms of cereals, including soft wheat, may be hidden under the name Marzuolo.
