The variety is an object of Greek breeding programs and scientific research associated with the Cereal Institute (ELGO-DIMITRA). It is traditionally used as a control sample when conducting field trials and genetic experiments.
During research in the 1990s, the variety was studied for aluminum tolerance. It was established that Sapfo possesses a relatively higher tolerance to aluminum toxicity in nutrient solutions compared to the variety Capeiti 82.
