Under the name Saragolle, a collection of ancient folk wheat forms cultivated in Italy since the 17th century is known, as well as a modern variety obtained by crossing the Iride and 0114 lines. Traditional forms are distinguished by tall growth, a developed root system, and adaptation to unfavorable climatic conditions.

The grain has a bright yellow color and a specific composition of proteins and gluten, which determines the special taste qualities of finished products, such as flour and pasta. The modern breeding variety was created for the purpose of industrial use and the preservation of high baking characteristics while maintaining the grain color.
