The variety is an ancient landrace whose history in Italy dates back to the beginning of the first millennium. The plant is characterized by strong stems, a developed root system, and long, bright yellow grains, which is due to the high content of carotenoids.

The variety possesses high adaptability to difficult climatic conditions, including drought, and exhibits historical resistance to diseases and lodging. In terms of composition, the grain differs from modern industrial varieties by a balanced ratio of protein and fiber, as well as a reduced gluten content.

Flour and semolina from this grain possess a distinct aroma and a characteristic yellow color. In the literature, it is important to distinguish this landrace variety from modern breeding lines that also bear the name Saragolla but possess different morphological and agronomic characteristics.
