Saragolletta is not a single modern variety, but a collection of heirloom local varieties historically cultivated in the Apulia, Molise, and Sannio regions. Genetically, these forms may include a mixture of several genotypes, which is a characteristic feature of landrace selection.

Plants of this group are characterized by high stature, reaching a height of 170–180 cm or more. The grain has an elongated shape; in individual varieties, such as Saragolletta rossa del Sannio, it is characterized by a reddish hue and smaller size.

The varieties are adapted to traditional farming methods without the use of intensive technologies. Traditionally, the harvest was used for the production of semolina, baking, and pasta making, valued for its nutritional value and protein content.
