The Kopaida variety is a local landrace of emmer wheat typical of the Central Greece region. It is included in the European catalogue of conservation varieties and is being actively studied in the context of preserving traditional crops.

Like other local forms of emmer, this variety is characterized by high total biomass, which allows for the use of straw in livestock farming. The grain is considered a promising raw material for the production of specialized food products due to its high content of beneficial nutrients.
