Dornfelder was bred by crossing the Helfensteiner and Heroldrebe varieties. It is a vigorous variety with an upright vine growth habit, characterized by high yields that require thinning to maintain grape quality. The variety is sensitive to drought, strong winds, and late spring frosts.

The leaves of the variety are large, five-lobed, and deeply dissected. The clusters are characterized by a large size and loose structure; the berries are medium to large, dark blue in color with thick skin and colorless juice. Due to the cluster structure and skin, it has good resistance to gray mold, but requires preventative treatment against powdery mildew.

Wines from this variety have a saturated dark red color with a violet hue. The flavor-aromatic profile of the wines includes fruit and floral notes, such as cherry, blackberry, blueberry, and elderberry, with moderate tannins and balanced acidity.
