The variety is a historical local variety of the Valencian Community. Its identity was confirmed by genetic analysis and ampelographic characterization. In recent years, the variety has been undergoing a process of recovery and study within the framework of projects for the conservation of ancient plant species.

Pampolat is used primarily as a wine grape variety for the production of dry wines. According to observations, the variety ripens earlier than the Tempranillo variety. Wines made from it are distinguished by freshness, significant acidity, herbaceous notes, and red fruit tones.
