The variety is used for the production of white wines, characterized by a neutral flavor profile with possible notes of quince, lemon, almond, and herbs. The plant is late-ripening, maturing approximately 30 days after the Chasselas variety.

Morphologically, the variety is distinguished by an open shoot tip with white-felted pubescence and medium-sized, five-lobed, deeply dissected leaves. The bunches are dense, conical, and medium-sized, with round, yellowish berries.

Pardillo has moderate vine vigor. The variety is traditionally cultivated in hot climate conditions with low precipitation, where it is capable of maintaining its acidity level. It has a number of synonyms, the most well-known of which is Marisancho.
