The fruit acidity of garden strawberries is characterized by the content of organic acids, primarily citric and malic, and the active acidity of the juice. Typical acid content values range from 0.7% to 1.4%, and the active acidity of the juice is in the range of 3.3–3.4 pH units.
From an agronomic perspective, for successful cultivation of garden strawberries, a slightly acidic soil solution reaction in the range of pH 5.5–6.5 is considered optimal. Deviations from this range impair nutrient availability: at pH below 5.5, the uptake of calcium and phosphorus decreases, and at pH above 7.0, iron and manganese deficiencies may occur.
