Bean processing technology requires mandatory deep thermal treatment to neutralize toxic compounds such as phaseolunatin and phasin. The process varies depending on whether grain or green beans are used.

Canning of beans is based on the detoxification of raw materials through heating. For grain beans, preliminary soaking for seed swelling, blanching at a temperature of 90–95°С, and subsequent sterilization in autoclaves at temperatures from 110°С are mandatory.

When processing green beans, varieties devoid of a parchment layer and coarse fibers in the pods are used. Finished product quality standards regulate seed uniformity, integrity after thermal processing, and brine clarity; meanwhile, lactic acid fermentation methods ("pickling") are not used for beans.
