A critically important condition for quality is harvesting the kernels at the milk stage of maturity. Overripe raw material contains an excess of starch, which impairs the texture of the finished product and requires adjustments to thermal processing parameters. The brine is a mixture of water, sugar, and salt, in which the natural sugars and starchy compounds of the grain itself dissolve during heating, causing the natural turbidity of the brine.
