In horseradish breeding and variety testing, rhizome length, diameter, weight, and morphological features are evaluated in accordance with UPOV descriptors. Standard indicators for marketable produce are considered to be a length of 30–35 cm and a diameter of about 5 cm, with a single rhizome weight of up to 400 g; however, certain varieties are characterized by different proportions.

High rhizome marketability is determined by the absence of excessive branching and deformations, which occur due to improper agronomic practices or unfavorable soil mechanical composition. Harvesting mechanization requires the selection of varieties with a smooth, cylindrical shape, while the quality of the flesh depends directly on a stable irrigation regime.

Due to the ability of rhizomes to penetrate to a depth of 2.5–5 meters, the groundwater level is a critical factor. Soil waterlogging triggers decay of the underground organs, whereas moisture deficiency leads to premature lignification and loss of succulence.
