Technologically valuable heads are those with thin, juicy leaves of white or light green color without necrotic spots or excessive venation. Mid-late and late varieties are primarily suitable for processing, as early-ripening hybrids have high water content and low sugar levels.

An important morphological trait is the size of the core (stump); its minimization reduces the percentage of waste during raw material preparation. When growing cabbage for industrial processing, a significant agronomic factor is the calcium supply of the plants, which positively influences tissue density and reduces the risk of head cracking.
