Suitability of spinach for processing

Spinacia oleracea L.

The suitability of spinach for industrial processing is determined by leaf morphology, chemical composition, and blanching resistance. Key criteria include high dry matter content, a minimal stem-to-leaf ratio, and color retention during freezing.

For industrial processing, spinach varieties with dark green leaves and a smooth leaf blade are preferred. A significant morphological indicator is low petiole content, as their proportion correlates directly with nitrate concentration in the raw material. The optimal yield for processing is harvested between 60–80 days, which allows for the achievement of the required industrial biomass.

The chemical composition of the raw material is characterized by a high dry matter content and a specific acid balance. It has been established that the level of oxalic acid positively correlates with chlorophyll intensity in the leaves. The technological value of a variety also depends on its ability to maintain organoleptic properties, color, and flavor after blanching and deep-freezing processes.
