The suitability of spinach for industrial processing is determined by leaf morphology, chemical composition, and blanching resistance. Key criteria include high dry matter content, a minimal stem-to-leaf ratio, and color retention during freezing.

The chemical composition of the raw material is characterized by a high dry matter content and a specific acid balance. It has been established that the level of oxalic acid positively correlates with chlorophyll intensity in the leaves. The technological value of a variety also depends on its ability to maintain organoleptic properties, color, and flavor after blanching and deep-freezing processes.
