In walnut commodity science, fresh fruits are defined as those from which the pericarp has been removed but which have not undergone the drying process that reduces kernel moisture to 8% and the whole nut moisture to 12%. Such nuts have a limited shelf life and require initial processing to remove the fleshy pericarp, which darkens rapidly during ripening.
In the breeding evaluation of cultivars intended for the fresh market, critical parameters include the ease of extracting the whole kernel, the absence of bitterness, oiliness, and crispness. The indicator of commercial maturity is the darkening of the internal septum and the ease with which the kernel pellicle separates; the shell must be completely free of pericarp residues and free of damage.
