The growing season of kohlrabi is calculated from the appearance of seedlings to the moment when the stem tuber reaches the size and commercial quality typical for the variety, usually 5–12 cm in diameter. When using the transplanting method, this period is often measured from the moment of planting seedlings into the soil.

Early-maturing varieties ripen in 38–70 days, which allows for 3–4 harvests per season. Late-maturing varieties require 80–150 days for stem tuber formation; they possess better shelf life and are suitable for winter storage.

Disruption of the optimal growing season leads to a deterioration in product quality: leaving plants in the field for too long causes tissue lignification and fiber formation. Late varieties are more resistant to coarsening, but require strict adherence to growing conditions to prevent bolting and stem tuber cracking.
