Blueberry flavor and aroma

The evaluation of blueberry flavor quality is based on tasting scores and biochemical indicators, such as the sugar-acid ratio. Key parameters include a sugar content reaching 15% on the Brix scale and maintaining soil acidity within the pH 3.5–4.5 range.

To determine blueberry fruit quality, expert sensory evaluations are used on 5-point or 10-point scales, where scores of 4.5–4.8 and 9–10, respectively, are considered excellent. Objective assessment includes analysis of sugar content and titratable acidity, the balance of which is expressed via the sugar-acid ratio. Unlike wild species, cultivar blueberries possess a higher sugar content.

Flavor profile manifestation is genetically determined but heavily dependent on environmental conditions and agronomic practices. Failure to maintain the optimal soil pH level of 3.5 to 4.5 leads to a reduction in varietal characteristics, resulting in berries that are small and excessively acidic. It has also been noted that cultivation in containers can negatively impact the intensity of aroma and flavor compared to open-ground cultivation.
