For spinach during the marketable production stage, the height of the leaf rosette is measured from the soil surface to the leaf tips. During the bolting stage, the total plant height is recorded from the soil surface to the growth point or the upper edge of the inflorescence, which can reach 25–50 cm.

Rosette height and its formation type determine the crop's suitability for mechanical or manual harvesting, with upright forms preferred for the fresh market. The formation of a stem approximately 30 cm in height is an indicator of the transition to the reproductive phase, which leads to a loss of marketability due to leaf coarsening.

Rapid increases in plant height are triggered by long daylight hours and elevated temperatures, leading to premature bolting. Growth habit and plant height are considered when selecting the sowing pattern to optimize light exposure and prevent etiolation.
