The root crops have an elongated shape, resembling a carrot or parsnip. The skin is very thick, dark brown in color, and rough in texture. The flesh is dark red or reddish-purple in color, often with distinct pink concentric rings. The weight of individual specimens can reach 500–900 g; the tops are large, with a bronze-red hue.
The growing season is about 75 days. Seed germination can be uneven; direct sowing in the ground is recommended. The root crops store well, and the taste may become sweeter over time. It is traditionally recommended to bake them whole, as the skin is easily removed after heat treatment.
