The plant belongs to the Cichorium intybus var. foliosum group and forms a rosette of leaves, in the center of which develop fleshy, hollow shoots. Depending on the breeding line, the plants can be early-maturing or mid-maturing, forming vigorous upright rosettes with serrated or deeply dissected green leaves.

The shoots and leaves have a characteristic bitter taste and contain vitamins, calcium, and phosphorus. Young shoots are consumed fresh or after heat treatment, and to obtain a continuous harvest, multiple sowings throughout the season are practiced.
