The variety forms dense rounded or slightly elongated heads of medium size. The leaves have an intense red-burgundy coloration with contrasting wide white veins. The period from germination to technical maturity is 75–95 days.

The leaves possess a crunchy texture and a characteristic piquant taste with a slight bitterness. The variety requires cool conditions for the formation of coloration and the development of flavor qualities; it tolerates cold well but is sensitive to severe frosts.

The chicory is used fresh for salads, as well as in cooking for the preparation of soups, risotto, stewing, or grilling.
