The Manzanilla tree has a medium size and a spreading crown shape. The variety is highly productive, but may exhibit alternate bearing and is sensitive to frost. It is self-incompatible, therefore in certain conditions it requires the presence of pollinator varieties.

The fruits are of medium or large size, about 4.8 g, characterized by an oval or rounded asymmetrical shape, good texture, and a high pulp-to-pit ratio. The variety is one of the most popular in the world for the production of table olives and olive oil extraction.

The oil of the variety is characterized by an average fat content, a balanced flavor with notes of herbs, apples, almonds, and tomato, as well as moderate bitterness and pungency. There are several varieties of this group, such as Manzanilla Cacereña, which may have genetic differences.
