Variety description

10 August 2026

The variety originates from the Puglia region, Italy. The fruits are used to produce oil with a delicate taste, moderate bitterness and pungency, in which the aroma is dominated by herbaceous notes of artichoke and turnip greens. The product is characterized by a moderately high polyphenol content.

The variety has a low oil yield: about 8–9 kg of finished product is obtained from 100 kg of raw material due to the low pulp-to-pit ratio. This is a traditional, historically established variety grown in hilly terrain.
