The Sinopolese variety is an ancient local crop of the Calabria region, Italy. It is a tall tree capable of reaching heights of up to 25 meters, which is grown primarily for the production of Extra Virgin oil. The plant requires cross-pollination with other varieties for fruit set, and harvest typically begins in November.

Oil produced from the fruits of this variety possesses a delicate fruity taste with notes of grass, almond, ripe tomato, and dried herbs. The product is valued for its balanced flavor and high content of polyphenols, which ensure resistance to oxidation. The variety is characterized by good drought and cold tolerance.
