The olive variety Simona is an ancient local variety grown in the vicinity of the town of Conversano in the Puglia region. Trees of this variety demonstrate high resistance to infestation by the olive fruit fly.
The variety is characterized by a relatively low oil yield, which is 8–9 kg per 100 kg of fruit, due to the specific ratio of pulp to pit. The oil has a medium intensity of fruity flavor with characteristic herbaceous notes, including hints of artichoke and turnip greens.
