There are two main forms — white and purple, with the latter considered the result of a spontaneous mutation.
The plant has a low yield. The white variety is preferred for frying, and the purple one for long stewing. The potato is known for its organoleptic properties, including fragrant creamy flesh and a sweetish taste.
