The Violine de Borée variety, also known as Bleue de la Manche, is an old local variety from the French department of Ardèche. The tubers have a small round shape, black or black-blue skin and purple, sometimes marbled flesh.
The variety belongs to culinary group C, characterized by a floury, crumbly texture and a mild flavor with notes of chestnut or hazelnut. The maturity period is estimated as medium-early or late; the plant is considered to have low sensitivity to diseases.
