The Gaitan variety belongs to the subspecies Trifolium subterraneum ssp. brachycalycinum. The plant has creeping stems and trifoliate leaves, as well as the ability for geocarpy — burying inflorescences in the soil after flowering to protect the seeds.

The variety is late-maturing and adapted to Mediterranean climate conditions. It is characterized by high protein content and the ability to maintain hardseededness, which ensures the survival and self-regeneration of crops in hot and dry summer conditions.
