Zollernspelz is an intensive type spelt variety that combines high yield with excellent baking characteristics, such as stable falling number and high content of crude protein and gluten. The plant belongs to mid-season or late-ripening varieties and is characterized by a short stem.
The variety possesses high lodging resistance, which allows the use of intensive cultivation technologies. It is resistant to leaf diseases, especially yellow rust, but may show medium or increased susceptibility to Septoria. The grain requires additional de-hulling after harvest due to the presence of glumes.
