Tumminia a reste nere represents a variant of the Tumminia wheat population, possessing black ear awns. This is an ancient cereal crop, grown in Sicily since ancient times, and is not a product of modern breeding.

The plants have a significant height, reaching 150–180 cm, and are distinguished by an extremely short vegetation period of about 90 days, which allows them to be sown in March. The variety possesses high drought tolerance and the ability to grow on poor soils.

The grain has small dimensions, an elongated shape, and a dark color. The flour obtained from this wheat is distinguished by a grayish hue and a specific aroma, and the protein content in the grain is 12–14 percent. The produce is traditionally used for the manufacture of pasta and bakery products.
